Lorenzo's Trattoria nails the traditional preparation of osso buco Milanese. The risotto is delicately flavored with saffron, and the braised veal is given a flourish of orange gremolada before serving. The citric tang of the orange offers acidity to cut through the intensely rich meat, keeping the palate primed for the prize: bone marrow. Use the beautiful silver marrow spoon to scoop out every indulgent bite.

Though it's become easier to find the modern Italian food in the decade since Lorenzo's Trattoria opened, it's by no means the standard. That's especially true on The Hill, where longtime restaurants continue to turn out Nonna's beloved specialities. Chef-owner Larry Fuse, on the other hand, uses classic ingredients in innovative combinations, like the steamed mussles with a little tomato served over polenta, the mussel juice waltzing with the corn of the polenta.

They add an interesting twist to traditional Italian cuisine. The food is excellent, service is great, drinks are generous. The restaurant [sic] itself has a very nice floorplan and is decorated tastefully. Great place for a date.

One of the newest additions to the Hill is a world away from the toasted-ravioli crowd. Young chef/owner Larry Fuse puts goat cheese in his rav appetizers -- no "toasting" here -- and for main courses he can stay true to tradition with classics such as osso buco or experiment with a new twist on an old fave, such as spinach gnocchi with olive-oil-poached tomatoes. Even the house salad, with shredded Asiago cheese, crisped prosciutto and pistachios, rises well above the ordinary.
